Since then, and over the last fifteen years, I have developed into a passionate gardener and nutritionist after witnessing first-hand how healthy eating habits and routines can help us heal the body of disease and improve our well-being. I discovered over this time that there is truly no better friend than a garden or another way to put it is there is no greater companion to a man's soul than a friend who is like a garden. It is my philosophy that anyone who is a true friend, anyone who is true love in our life springs up like a vine from God Almighty, the good root, friend of all time and forever. This may seem odd to some readers, but you will have to forgive me, I love giving God credit for the beauty in this life.
Last week, I just discovered one of the most impressive blends to ever grace a plate and pass my lips. Salmon and watermelon are such a perfect pairing that I kinda hate myself for taking forty-nine years to stumble upon it. Honestly, it was an accident too. I was just being lazy and didn't bother cleaning a plate that I ate watermelon on prior to cooking dinner and just plopped the spinach and fish right on top of it. Then, I said 'why not see how this turns out?' before spritzing on a little more watermelon juice and a splash of teriyaki sauce. It was fantastic. The next day, I did it again and used a little balsamic vinegar instead of teriyaki sauce and it was just as good. I highly recommend it.
Whenever I cook salmon, I tend to go with some herbs and peppers from the garden along with Cajun seasonings or just cayenne pepper and a pinch of salt. I also always air fry the fillet. If the fillet has skin on it, I cook it skin up initially and season that side. Tell you the truth, it's pretty hard to go wrong with salmon unless you cook it too long. But even then, just splash some olive oil over your salad and you should be good.
I love using my air fryer and actually I love fried foods a little too much which is why I spun off into this salmon kick lately. Turns out that salmon has about 10 to 15 percent more water than chicken and at least twice that compared to fried chicken or other fried foods which I was mostly binging on until this fish love fest I jumped into about 2 months ago. By the way, Mahi Mahi is another great option to pair with greens or other veggies, and fruit.
Alot of dieticians will talk about the importance of drinking a lot of water per day but in reality, we get a lot of water from the food we eat too if we're making the choice to load our plates with fruits, veggies and meat that has high water content. Drink water. I am not trying to talk you out of this but dude having a flavorful meal that also hydrates the body is so good for the soul. It really is the best way to go.
You can have fun with the herbs and spices you prefer on your fish, but this is mine. Enjoy!
Salmon fillet
Pinch of salt or splash of teriyaki sauce
Cayenne pepper, sliced or ground seasoning
Chopped sweet pepper (I like to cook some on the fish and toss fresh slices into the salad too)
Chopped fresh peach, grape or cherry tomatoes
Chopped turnip greens (Any greens, really, but my turnip greens are so potent they burn your nose hairs)
Chopped spinach or cabbage leaves
Chopped basil, thyme, dill, or all of the above (whatever you like best)
Chunks of watermelon
Splash of watermelon juice
Olive oil
Balsamic vinegar (optional)
Don't say I never gave you nothing...
